What is a Personal Chef?

A personal chef is a chef who is hired by different clients and prepares meals in the clients’ home kitchens, based on their needs and preferences. The personal chef will create a customized meal plan, shop for all groceries, prepare the meal, and clean up the kitchen.

Note that a personal chef is distinct from a private chef, which refers to a chef who is employed exclusively by one client, and in some cases lives in the client’s home.

When hiring a personal chef to provide either a packaged meal service or to cook for a dinner party, a menu and a budget are submitted for the client’s approval.

Typically, the chef is given approval, a deposit, or (if familiar with the guest/frequent client) an expense account for the menu. The client pays for this in addition to the cost of the chef’s services and gratuity.

Old fashioned pit barbeque at its best! Choose from North Carolina Pulled Pork, Kansas City Chicken, Texas Smoked Brisket, or a whole Georgia Pig Pickin! A Night in Havana

Pit-roasted pig is the traditional centerpiece of a Cuban Nochebuena, or Christmas Eve supper. Whole young pigs marinated overnight in tangy mojo, a garlic and sour orange marinade flavored with cumin and oregano. We use a traditional La Caja China (Cuban Roasting Box) to roast a pig that your whole party will be talking about for years to come!

Side options (2) include Moros y Cristianos (Cuban black beans and rice), Pan Medianoche (sweet bread rolls), Plátanos Dulce (sweet plantains with rum and brown sugar.)

Da Fine Print

Single meal includes 1 entrée, 2 side dishes, 1 bread, 1 beverage, paper plates, cups, napkins & utensils (as needed.) Additional sides, beverages, and desserts may be added to the base menu for an additional fee. Ongoing meals include choice of entree and 2 side dishes. I am not licensed to provide or serve alcohol, but you are certainly welcome to do so yourselves, while I provide the rest of the meal.

40 plate minimum for a whole pig, parties of less than 40 get our delicious pulled pork shoulder.

Per my “Personal Chef” status, the States of Oregon & Washington requires that there must be a residential kitchen onsite, and that I use that facility to prepare the meal. If the kitchen is not onsite, the client is free to transport the prepared food anywhere they like, once it’s prepared and packaged in their kitchen. A non-refundable 50% deposit is required at the time of booking, with the balance due within 10 days of the event.

Prices are based on “per-plate” service. Additional food, or “leftovers” may be purchased at an additional charge in per-plate quantities, but are not included as part of the original quote.

Gratuities are not included in menu pricing, nor required, but if you love the food (and you will) I never turn down a tip!
